Low Carb Crepes

Modifications to my first try at a crepe (recipe here).
 

INGREDIENTS

  • 1 egg
  • 1/3 cup ricotta cheese
  • 1/2 scoop vanilla whey protein powder
  • Optional: Splenda and cinnamon

 

DIRECTIONS

  1. Mix egg, ricotta, and whey.
  2. Heat a skillet over medium heat and spray with cooking oil.
  3. Pour mixture into skillet and swirl to coat pan.
  4. Once crepe begins to set-up run a spatula under the crepe and flip (difficult!) to cook other side for a few seconds.
These are much more light and fluffy than my original egg-only recipe. Very good actually! I topped mine with some Splenda and cinnamon for an afternoon snack.
