Another Funky Audrey Recipe… Yam Muffins

Yam Muffins??? Is she serious?!?!?

Yes. Sweet potato muffins sound slightly better but I like the ring of Yam Muffins. Mmmmm…

Another very-weird, high-protein, low-carb recipe from your’s truly. Try at your own risk. They are okay but not my favorite thing I’ve ever made.

 

Yam Muffins

 

INGREDIENTS

  • 1 Whole Egg
  • 2 Egg Whites
  • 1/2 cup Splenda (or more, to taste)
  • 1 tsp Pumpkin Pie Seasoning (or more, to taste)
  • 1/4 cup Oat Bran
  • 3 oz Yam (baked and mashed with skin)
  • 1/2 scoop Vanilla Wehy Protein Powder
  • 1 tsp Vanilla Extract
  • 1 tbsp Baking Powder

 

DIRECTIONS

  1. Pre-heat oven to 350 degF.
  2. Mash yam with skin on. Make sure the skin is broken up. (The skin adds extra nutritive value and also seems like raisins.)
  3. Mix together all ingredients.
  4. Spoon into muffin pan. This recipe should make 4-6 depending on height. They don’t rise very much so you can fill the cups up.

When divided into 4 muffins the nutritional facts per muffin are: 97.5 calories, 2.2g fat,12.3g carbs (2.3g fiber), 8.2g protein.
